How to make Black Forest cake at home

Straight from our patisserie where magic all the magic happens, we have a cake so delectable it’s time to throw a party … or perhaps you could devour it yourself. Both are equally acceptable.

If you’re entertaining this silly season, all of these elements can be prepped the day before and assembled fresh on the day. Give this one a red-hot go, spread some joy, pat yourself on the back and tag us in your masterpieces.


Sponge Layer

  •  5 eggs
  • 160g sugar
  • 90g flour
  • 30g cornstarch
  • 30g cacao powder
  • 8g baking powder
  • 1/2 teaspoon charcoal powder

Vanilla Mascarpone Layer

Make 1 day ahead

  • 55g caster sugar
  • 110g mascarpone cheese
  • 500ml  thickened cream
  • 8g gelatin sheet
  • 55ml full cream fresh milk
  • 8g vanilla paste


Cherry Syrup

  • 180g Cherries
  • 100g Sugar

Chocolate Syrup

  • 200g Caster Sugar
  • 200ml Water
  • 50g Cacao

Chocolate Ganache

  • 150ml Cream Thickened
  • 75g Dark Chocolate
  • 75g Milk Chocolate


  • Dark Chocolate Curls
  • Sour Cherry Puree
  • Maraschino Cherries
  • Cocoa Powder, sifted
